Easy panellets recipe (Catalan Halloween traditional sweet)



We are near to celebrate All Saint Eve. Although Halloween is increasingly present in our environment, at home and at school we celebrated our party, "la Castanyada" (the Chestnut party) eating chestnuts, sweet potatoes and panellets. 

We can find many recipes for making the typical sweets, panellets. The basic recipe is made with a mixture of ground almonds and sugar, but to make it easy for children, and gather the ingredients together, we can put some boiled potatoes. 

I share with you my recipe of panellets. I make them at home and at school with the children, they are delicious!

INGREDIENTS for one kilo of panellets


500 gr. ground raw almonds
500 gr. sugar
200 gr. boiled potato

TOPPINGS


100 gr. pine nuts
100 gr chopped ground almonds
100 gr coconut flakes
   2 teaspoon coffee powder
   2 teaspoon sweetened cocoa powder
   2 eggs

PREPARATION


Boil potato until cooked. Drain water, peel and mash with a fork. Allow to cool.
Combine the cooled potatoes, ground almonds and sugar with the mashed potatoes until to have a uniform dough.
Let dough rest a few hours.

Divide the dough into as many parts as kind of panellets you want to make.

Pine nut panellets: Make balls with the dough. Mix the pine nuts with beaten eggs, with this trick the pine nuts stick better to the dough. Paint them with egg yolk before putting in the oven.

Almond panellets: Make small bars with the dough. Use the same technique to stick almonds to stick pine nuts to the dough. Paint them with egg yolk before putting in the oven.

Coconut panellets: Mix the dough with the half of coconut flakes. Make small pyramids or balls and coat with the remaining coconut.

Coffee and cocoa panellets: Mix the dough with coffee or cocoa and make balls.

COOK

Put baking paper on an oven dish. Bake in preheated oven to 200-250 grades for 8 to 10 minutes.
